Overview
Kabana sits on a rooftop at the gates of the medina, close enough to the Koutoubia that the minaret anchors the view from every table and lights up as the sun drops. Opened in 2019 as the first address of the Amazoz Hospitality Group, it is dressed as a hanging garden: swaying palm trees, rattan furniture, jungle-print fabrics and brightly coloured banquettes on the open-air terrace, with an exotic-style cabana sheltering a lively indoor bar. It is open every day from 11am to 2am and follows the rhythm of the sun, from brunch and laid-back lunches to dinner under the stars. Chef Luisma Naranjo, from Ibiza, leads a bold, modern take on Mediterranean cooking built for sharing, with the truffle and parmesan fries as the house signature, while a dedicated sushi chef trained under a Japanese master runs a menu of his own. The bar pours an extensive list of cocktails and spirits alongside a curated wine selection. After sunset the music takes over. Kabana works with guest DJs rather than residents, so the line-up of local and international names keeps changing: Latin Vibes on Thursdays, live bands warming up the weekend before the DJs step in, and Sundays that alternate between jazz and bossa nova. By late evening the terrace has the energy of an open-air club with the Koutoubia as its backdrop. It is unashamedly a scene, so book ahead, especially for a table at sunset.
